Accommodations near our cooking school are amazing.  Palazzo Conforti Treehouse Resort.  Charming, comfortable, and historic. The graciousness of the hosts, Francesco and Achille Conforti,  allows you to relax and unwind during your stay. Once you've confirmed your room and met the Palazzo's deposit/cancellation requirements, revise our site to secure your place in class.  We require a separate deposit. 

During our hands-on cooking classes, you'll have the opportunity to learn from Authentic Calabrian grandmothers (Nonne Calabresi) who are experts in traditional Calabrian cuisine. From making fresh pasta by hand to preparing delicious sauces and indulging in decadent desserts, you'll learn the secrets of authentic Calabrian cooking that have been passed down through generations.

Our cooking school is a perfect destination for food lovers, culinary enthusiasts, and anyone seeking an authentic travel experience.  Remember, nothing nis more authentic than a Calabrian grandmother.


Whether you're a beginner or an experienced cook, our classes are tailored to suit your level of expertise, allowing you to learn at your own pace and gain confidence in the kitchen.


What To Expect 

First, our recommended lodging while attending class is Palazzo Conforti Treehouse Resort.  It's a family-owned 400 year old palazzo turned into an a most charming B&B.  Treehouses, modern in every way, have been erected in the olive grove/fruit orchard adjacent to the palazzo and comprise a "village" complete with an outdoor eating area and a pool. Next, we have a cadre of local grandmothers, "Nonne Calabresi", who will share many of their secret kitchen hacks and tell stories of their own evolution as great Calabrian cooks.  Each day, a different grandmother.

Also, our translator and guide, is certified by the Italian government and is our highly-respected bridge between the grandmothers and our North American students.

Finally, our "field trips".  It's not really a school without a field trip.  Our field trips are always food and/or beverage related. Learn to make cheese at a local farm, visit a vineyard/winery perched high above the Crati Valley that makes world-class wines.  Taste the meats and cheeses that Calabria is famous for and learn why Calabrians specialize in preserving foods.  Please Note: the field trips are included in the enrollment fee.  You don't have to go, but they are part of what and how we teach.

Our desire is to teach the history of Calabria through its iconic foods. Many of these were brought to Calabria via thousands of years of invasion and occupation. Using grandmothers (nonne) to help us tell the origin stories of traditional Calabrian cuisine.


While tourist don’t go to Calabria…travelers do. And, it’s to these people, our school provides what they seek. Authenticity. There is nothing more authentic than a Calabrian grandmother.

What's Included

  • For those who choose our Classic Experience, we offer transfers from major transit points in Calabria: Lamezia Airport (SUF) and Paola train station.

  • Lodging at Palazzo Conforti Treehouse Resort w/breakfast. 

  • 20 hours of instruction in typical and traditional Calabrian cooking. Pasta’s, breads, pork specialties, fish, vegetables. 4 hours per day x 5 days.

  • Lunch after each class.

  • Field Trip to a local farm, vineyards, markets, specialty shop or factory producer.

  • 1430 hrs - Field Trip 

  • 1730 hrs - Return to Palazzo Conforti

  • Dinner on your own.
