Welcome to our humble cooking school, nestled in the serene, Chestnut tree-covered hills west of the city of Cosenza in the region of Calabria, Italy. Calabria is the southern=most region of Italy and occupies the "toe" of the Italian boot.

This land has a history of invasion and occupation going back to the Bronze Age. Each culture left behind artifacts in the way of foods that they introduced from their home lands. Over the many centuries, these food artifacts have woven their way into the traditions of Calabria. The history of the land and its people can be explained through the foods the Calabresi eat to this day.
Here, we offer a unique culinary experience, where Calabrian grandmothers, with their time-honored traditions and authentic techniques, are the esteemed instructors of our cooking classes.

KEEPING CALABRIAN TRADITIONS ALIVE
We are a Calabrian-based cooking school that is taught entirely by grandmothers, or “Nonne”. The school is located in the chestnut tree-covered hills west of Cosenza, in a small village or “borgho”, called Marano Marchesato. This area occupies the very toe of the Italian boot and is an ancient land with ancient traditions.
Our approach to teaching you about the many facets of Calabrian cooking is based on Seasonality. While Calabria is fortunate to have a long growing season, there are many products that shine their best at certain times.
