Think of tagliatelle, but thinner and even more delicate. That's Tagliolini! It's pronounced tah-lyee-oh-LEE-nee.

Made with just flour and eggs, it has a light, almost ethereal quality. Unlike some heartier pastas, tagliolini shines in lighter sauces, where it can soak up all those delicious flavors. Traditionally, it's served in broths or light sauces.


Tagliolini Tips for Perfection


Don't let the fine pasta intimidate you! I'll share some secrets that my nonnina taught me for perfect tagliolini.

  • Fresh is best. If you can find fresh tagliolini, grab it! It has the most fantastic texture. But dried tagliolini works well, too, and you can usually find it at most grocery stores.

  • Salt and water. Cook your tagliolini in plenty of well-salted water. This helps it cook evenly and adds a touch of flavor.

  • Cook it fast. Tagliolini is a quick cook. It usually takes only 3 to 4 minutes in boiling water, so keep an eye on the pot! Don't overcook it; you'll end up with mushy noodles, and nobody wants that.

  • Save that starchy water! A bit of the water you cooked your tagliolini in is like liquid gold. It adds starch to your sauce, helping it cling beautifully to the pasta.

  • Don't rinse! Here's a secret most people don't know: rinsing your pasta washes away the starchy coating that helps the sauce stick. Just drain it well, and that's all you need.


Tagliolini Recipes to Try at Home

Now that you know the basics, let's get creative with some tagliolini pasta recipes!


Light and Creamy


This is where tagliolini truly shines.

Think delicate sauces like cacio e pepe (cheese and pepper) or a simple butter and sage sauce. These kinds of sauces let the flavor of the fresh pasta shine through.

Toss it with a simple sauce of butter, fresh lemon juice, finely chopped parsley, and a sprinkle of Parmesan cheese.

The delicate nature of tagliolini pairs perfectly with the light sweetness of seafood. Try a classic frutti di mare (seafood medley) or a simple shrimp scampi.

In some parts of Italy, like Piedmont, tagliolini is famously paired with truffles.

Shave some fresh black truffle over a simple buttered tagliolini for an unforgettable experience.

Melt butter in a pan, add thinly chopped ham, al dente tagliolini, and grated Parmigiano Reggiano or Parmesan. Spread the tagliolini mixture in a baking dish, pour over béchamel sauce, and top with more Parmigiano Reggiano or Parmesan.  

Bake until it's beautifully golden brown and bubbly.
